Ingredients: 1 cup dried lentils, rinsed 2 carrots, chopped 2 celery stalks, chopped 1 onion, diced 2 garlic cloves, minced 1 can (14 oz) diced tomatoes 6 cups vegetable broth 1 tsp thyme, 1 tsp cumin, salt & pepper to taste Optional: a squeeze of lemon before serving Instructions: Sauté onion, garlic, carrots, and celery until softened. Add lentils, tomatoes, broth, and spices. Simmer 25–30 minutes until lentils are tender.
