Kale and Sausage Soup
Ingredients
- 1 tbsp olive oil
- 12 oz sausage, thinly sliced
- 1 onion, diced
- 2 large carrots, chopped
- 2 stalks of celery, chopped
- 2 15-oz cans of cannellini beans
- 4 cups water
- 3 packets Collagen Bone Broth in Roasted Chicken + Herb Flavor or Vegetable Flavor
- 2-3 cups kale, chopped
Directions
- Heat 1 tablespoon of olive oil over medium heat in a large soup pot.
- Add sausage, and cook for about 8-10 minutes or until browned.
- Add onions, carrots, and celery. Cook for about 8 minutes or until vegetables are tender.
- Mix in kale, and cook until it starts to wilt (about 1-2 minutes).
- Stir in beans, water, and Collagen Bone Broth packets. Bring to a boil.
- Lower heat to a simmer, and cook uncovered for 15 minutes.
- Remove from heat, and divide soup among bowls. Top with parsley (optional).
- Sip, savor, and stir it!
Leftover Turkey and Vegetable Soup
Ingredients
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 large carrots, chopped
- 2 celery stalks, trimmed and chopped
- 2 large bell peppers, chopped
- 5 cups water
- 3 packets Vegetable Flavor Collagen Bone Broth
- 1 10-oz can of diced tomatoes
- 1 bay leaf
- 1/2 tsp dried basil
- 2 cups cooked turkey or chicken, shredded
- 1/2 cup uncooked whole-wheat pasta, orzo, or pasta substitute (optional)
- Fresh cilantro, minced (garnish)
Directions
- In a large saucepan, saute the onions, carrots, celery, and peppers in olive oil until tender. Add garlic, and cook for 2 minutes longer.
- Stir in the water, can of diced tomatoes, bay leaf, and basil.
- Bring to a boil. Reduce heat, and simmer uncovered for 15 minutes.
- Meanwhile, cook orzo or pasta according to package directions and drain.
- Stir orzo and turkey into soup. Heat through.
- Discard bay leaf.
- Sprinkle with cilantro.
- Sip, savor, and stir it!
Bone Broth Chicken Gravy
Ingredients
- 4 cups warm water
- 2 packets Roasted Chicken + Herb Flavor Collagen Bone Broth
- 2 tbsp butter or ghee
- 2 tbsp flour
- 1 tbsp fresh rosemary, chopped
- 1 tsp fresh cracked black pepper
Directions
- Heat a large, deep skillet over medium heat. Add the butter or ghee, rosemary, and cracked black pepper.
- Cook until the butter has melted and the herbs are fragrant or for about 2 minutes.
- Add the water and Collagen Bone Broth, and whisk well. Bring the mixture to a simmer, occasionally whisking as you add in the flour. Cook for 10-15 minutes to reduce and thicken the gravy.
- Remove from heat, and allow to cool for 10 minutes before adding to a blender.
- Blend with caution (hot liquids can cause the blender lid to pop off) on high speed until creamy in appearance. Keep warmed until serving.
