Summer is here, and we are all looking for healthy, nutritious, refreshing snacks to keep us cool. A friend specifically asked me if I had any watermelon recipes. I did some digging and found some, and I thought I would share with you!

WATERMELON FRIES WITH COCONUT LIME DIP?

A healthy snack for the whole family & perfect for the 4th ??

1 watermelon rind removed and cut into long fry-like shapes
2 tsp Tajin Classic Seasoning
Dip:
1 cup coconut yogurt
Zest and juice of 1 lime
1 tbsp coconut sugar or to taste

In a bowl, combine yogurt, lime juice, and zest, and coconut sugar. Set aside.
On a plate, scatter watermelon fries and sprinkle Tajin’s classic seasoning.
Serve with dip and enjoy??

WATERMELON PIZZA!

This colorful fruity concoction is a healthy alternative to regular pizza and is rich in vitamins and minerals. Watermelon pizza can be served as a healthy dessert or appetizer.

Ingredients

  • 3 strawberries large, sliced
  • 1/2 cup blackberries
  • 2 mandarin oranges peeled and separated
  • 1/4 cup blueberries
  • 1/3 cup raspberries
  • 1/4 cup pineapple chopped or sliced
  • 1 kiwi large, peeled and diced
  • 3 slices watermelon 1 inch thick slices

Cream Cheese Topping

  • 4 oz cream cheese softened
  • 1/2 cup Greek yogurt plain
  • 2 Tbsp powdered sugar
  • 2 Tbsp almond extract
  • 1/2 cup heavy whipping cream whipped to medium peaks

  • Beat softened cream cheese and Greek yogurt together in a bowl using a hand mixer set to medium speed.
  • Beat the heavy cream, powdered sugar, and almond extract together until medium peaks form. Fold the whipped cream into the cream cheese mixture until soft and fluffy.
  • Peel, separate, and halve the mandarins. Peel and slice kiwi. Hull and slice the strawberries.
  • Slice your watermelon into three 1-inch thick rounds.
  • Top watermelon slices with the cream cheese mixture using a rubber spatula to spread evenly.
  • Line the perimeter of the cream cheese layer with blueberries.
  • Top with pineapple, kiwi, oranges, strawberries, blackberries, and raspberries.
  • Use a sharp kitchen knife to slice the watermelon round into six wedges. Repeat the process for all three watermelon slices.

Expert Tips & FAQs

  • This recipe makes three watermelon pizzas. If you only want one pizza, save the extra cream cheese and yogurt mixture to dip the extra fruit on the side.
